Applesauce Cake
1 cup raisins
1/2 cup shortening
1-1/4 cup sugar
2 eggs 1 cup applesauce
2-1/4 cup flour
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon baking soda
1 teaspoon baking powder
Cream shortening and sugar together. Add well beaten eggs, raisins.applesauce, beat well. Sift flour with salt, spices, soda and baking powder, add to creamed mixture. Blend thoroughly. Pour into pan. Bake at 375 for 30 minutes.
Double Lemon Pudding Cake
1 lb. 3 oz. lemon cake mix
4-1/2 oz. package instant lemon pudding mix
3/4 cup water
3/4 cup salad oil
4 eggs well beaten
Combine and mix the cake mix and instant pudding mix, add water, oil and eggs. Beat 3 to 4 minutes at high speed. Pour into a well greased 10 inch bundt pan or tube pan. Bake in pre-heated 350 degree oven about 50 minutes. Cool 10 minutes. Served frosted or topped with whipped cream.
Upside Down Apple Cake
1/4 cup butter
1/2 cup brown sugar
3 or 4 apples sliced in very small squares
1/4 cup oil
1/2 cup milk
1/4 cup raisins
2 tablespoons baking powder
1/4 cup chopped nuts
2 eggs
1 cup sugar
1/2 teaspoon salt
1-1/2 cups flour
Put butter and brown sugar into a shallow baking dish, of medium size. Place in oven to melt butter. Add apples, nuts and raisins. Cream oil and sugar, add eggs. Combine dry ingredients, add alternately with milk to creamed mixture. Pour over apples. Bake 30 minutes, or until brown in a 400 degree oven. Turn out with apples on top.
Pineapple Bread
4 eggs
3/4 cup pineapple juice
1/2 cup crushed pineapple
3 cups flour
1 cup sugar
1/2 cup oil
1 tablespoon baking powder
1/2 cup nuts
Combine eggs, sugar, oil, juice and pineapple and mix well. Sift together baking powder and flour and mix into pineapple mixture. Add nuts. Pour into a greased 9"x5" loaf pan. Bake at 350 degrees for 50 minutes.
